Gobi Shimla Mirch



 (Cauliflower & colored peppers stir fried and cooked in delectable spices)

 A simple tasty vegetable which can be served any time lunch or dinner along with any dal or gravy dish of your choice....... 

Ingredients:

  1. Oil – ¼ cup
  2. Cumin seeds – 1tsp.
  3. Coriander seeds (lightly crushed) – 1tsp.
  4. Onion (chopped) – ½ or 1 small
  5. Ginger – 1 tbsp.
  6. Garlic – 1 tbsp.
  7. Cauliflower – 1 cut into flowerets
  8. Colored peppers – 1cup (cut into desired shape & size)
  9. Chopped tomatoes  - 1medium size
  10. Salt – 11/2 tsp.
  11. Sugar - pinch
  12. Cayenne – ½ tsp.
  13. Turmeric – 1tsp.
  14. Paprika – ½ tsp.
  15. Cumin powder – 1tsp.
  16. Coriander powder – 1tsp.
  17. Chana masala – 1tsp.
  18. Cilantro – 2tbsp
  19. Dry Fenugreek leaves – 1tbsp
  20. Water – ¼ cup
  21. Cilantro – for garnish
Method:

  1. Heat oil in a medium high heat in a wok/pan
  2. Add cumin and coriander seeds.
  3. Let them crackle.
  4. Add onion ginger and garlic and saute for 1-2 min
  5. Add the cauliflower and roast them  for 15-20 min. 
  6. Stirring in between to avoid sticking to the pan
  7. Lower the heat & mix peppers & tomatoes to it.
  8. Now add all the ingredients from nos. 11 – 20.
  9. Mix well and add water.
  10. Cover and cook on low heat till the oil separates and the vegetables are soft to touch.
  11. Uncover and roast on medium high heat for 1 - 2 minutes.
  12. Serve hot garnished with cilantro
  13. Enjoy it with any bread of your choice
